10 Seafood Trends for 2022. U.S. Diners Increasingly Voting for Seafood

 



In 2021, frozen seafood increased 4.1% in dollar sales year-over-year, hitting the $7.3 billion mark, according to the National Provisioner (NP) 2022 Seafood Report. This represents a 40.4% growth compared to two years ago. The better news for seafood sellers is the surge in sales shows no signs of slowing down, with 41% of consumers saying they want to eat more seafood in 2022. And they are sticking to this resolution; according to The Shelby Report, frozen seafood dollar sales in March gained 5.7% compared to last year ago and was 28.5% above 2019. Leading much of this growth are restaurateurs looking to give consumers what they want while lowering the waste and costs associated with fresh seafood.

So what do seafood diners want in 2022? Below are some current trends to help restaurants plan their menus and frozen seafood purchasing.

Health and wellness. This has been a significant trend fueling seafood growth in recent years, and it is expected to continue through 2022. Seafood is packed with protein, omega-3, and other nutrients and is low in cholesterol and calories, making it an ideal food for staying healthy. Most experts recommend eating seafood at least twice a week—more good news for seafood sellers.

Sustainability. The number of sustainability-focused seafood shoppers jumped from 29% in 2019 to 41% in 2021, according to the 2021 FMI Power of Seafood Report/Nielsen IQ. Again, this percentage is expected to continue to climb through 2022

Ethnic roots. This includes going back to consumers’ own origins—and those of others. Norwegian, Russian, and Filipino are currently leading the way—all of which have strong ties to seafood. Meanwhile, Italian, French, and Mexican classics are increasingly being prepared with seafood to bring a touch of innovation to more traditional ethnic classics.

Inclusion. Another trend tied to ethnicity is the blend of cultures where anything goes. MediterrAsian is one example where two of the healthiest cuisines collide and rely heavily on seafood.

Salads. Seafood is invading the greens with increasing regularity and deliciousness. Everything from classic Caesar’s made with grilled shrimp or fish to chilled salsa and calamari atop bib lettuce—and many, many more.

Yuzu. This Asian citrusy spice is all the rage. Its lime, lemon, and grapefruit blend makes it ideal for use in seafood dishes and is being embraced by chefs with increasing zest.

Reductionism. Reducing consumption of meat, dairy, and eggs without entirely removing them from the diet is a trend that started gaining steam in 2021 and has continued gaining ground in 2022. This is another trend that has increased the consumption of seafood in restaurants.

Grilling. As the popularity of grilling at home has continued to rise, so has the number of diners who prefer this fast and flavorful cooking technique from sit-down eateries. A healthier alternative to fried, grilled seafood, such as shrimp and firm fish such as branzino, are moving center stage.

Turmeric. While not a new spice, Turmeric has been gaining attention for its immune-boosting, swelling reduction, and anti-inflammatory qualities. From the ginger family, Turmeric and seafood make a significant coupling.

Take out. While diners are coming back to sit-down restaurants, the momentum of take out hasn’t dropped off as expected. In fact, 60% of Americans order take out or delivery at least once a week. This combined with the desire to eat healthier has consumers looking for seafood dishes that travel well.

Scaled back/double-duty. Rising prices and waste reduction remain top-of-mind for restaurants as diners return to sit down eating following the pandemic shutdown. This has many restaurant owners scaling back their menus and looking for items, like seafood, that offer diversity in cooking methods and cuisines and can transition from appetizers, soups, and salads to entrees or side dishes.

The year is off to an excellent start for seafood sellers. Incorporating some of these trends will help ensure a great sales finish.
