Easy Seafood Medley Linguini Pasta

Ingredients:
1 bag HOS seafood medley
4 strips thick cut bacon cut into 1/2” pieces
4 cloves garlic smashed
1 bottle clam juice
2 tablespoons whole unsalted butter
1/2 cup white wine
1 box linguini
Parsley
Method
1. Pre cook linguini according to instructions on package, coat with a little olive oil and set aside.
2. In a skillet over medium heat place bacon and cook until crispy. Remove bacon with a slotted spoon and set aside.
3. Drain off half the grease from bacon leaving about 3 tablespoons in the pan. Add the garlic and sweat for about 2-3 minutes over medium heat. Then increase heat to high and add seafood medley. Cool for about 5 minutes or until caramelization forms on Shrimp and scallops.
4. Deglaze with white wine and allow to reduce slightly. Then add clam juice. As soon as it comes to a boil, remove from heat and add butter and parsley. Mix with spoon until incorporated.
5. In a large ceramic or stainless bowls toss seafood with linguini and bacon.
