Sicilian Calamari
Ingredients:
Harvest of the Sea - Platinum Ring & Tentacle Calamari
For Calamari:
1 Tbsp Extra Virgin Olive Oil
2 Cloves Garlic smashed and roughly chopped
1 Tbsp whole unsalted butter
1/4 cup white wine
1 Tbsp minced parsley
salt and pepper
Salad:
1 bulb fennel core removed and shaved thin
6 Sprigs Italian Flat leaf Parsley
8 Kalamata olives (Pits removed and roughly chopped)
1 Blood orange (cut into segments)
2 Tbsp Extra Virgin Olive Oil
1/2 Lemon grilled and then juiced
Salt and pepper
Instructions
Pre-heat sauté pan over high heat, place the olive oil, garlic and cook until garlic starts to brown (approx. 2min). Then add calamari and mix to coat with garlic oil. Cook for approximately 2 minutes, then deglaze pan with white wine and finish with whole butter. Season to taste with salt and pepper. Allow to rest about 5 min
For the salad: Combine all ingredients and mix thoroughly to combine.
Plating: Plate salad in the center of dish and top with rested calamari. Enjoy with a nice picpoul de pinet or pinot grigio
